INGREDIENTS                                                                                                                                          500 gm boneless mutton cut into 2cm -thick cubes,1tbsp cumin powder,zest,juice of 2 lemon, 11/2 cup red(or) brown rice, 2 cups baby spinach leaves                                                                                                                                METHOD.                                                                                                                                                    marinate the lamb with the cumin powder n the zest n juice of 1 lemon for an hour.boil the rice in salted water till tender,goan rice takes a long time to cook.drain n keep aside .mix the baby spinach leaves n the remaining zest n lemon juice with the rice.cook the lamb in a non-stick frying pan over medium heat till is cooked through but still slightly pink.add a bit of water needed but ensure it dries up. serve hot with the rice n enjoy eating.
