This takes all of 5 minutes to make and is a nourishing and light lunch or even dinner.you can put in more vegetables,if you want a veg option then use vegetables and omit the chicken.
INGREDIENTS
- 2 cups chicken stock
- 1 stick celery
- few baby spinach leaves
- 1/2 chicken breast,sliced,and handful frozen prawns
- 100gm fine rice noodles
Cook the noodles according to the packet instructions and place in individual bowls,heat the chicken stock along with the celery and bowl for 5 minutes. discard celery and add in the chicken slices,simmer till done,remove and place on top of the noodles.now cook the prawns and then the spinach in the same way and when done pour the stock over the noodles.serve immediately sprinkled with some hot fresh red chillies on top.
