Chicken Mayonnaise

INGREDIENTS



  1. 500gms chicken legs and thigh pieces
  2. 2medium onions chopped
  3. 1tsp ground black pepper salt to taste
  4. 2tbsp chopped parsley leaves
  5. 150gm mayonnaise
  6. 1tsp butter
METHOD
Boil the chicken along with the onions,half the pepper and salt.the water should just about cover the chicken
so that there is only a little water left at the end.
   Once the chicken is cooked and just a little water is left in the pan,now add butter and parsley.remove from the fire and cool.once cold,shred the chicken and mix in the mayonnaise and the remaining pepper.put into a serving dish,cover with foil and refrigerate for 1 hour and now garnish with some parsley sprigs and serve cold
with bread and  garlic butter.

Easy Chicken Soup With spicy Rice Noodles

This takes all of 5 minutes to make and is a nourishing and light lunch or even dinner.you can put in more vegetables,if you want a veg option then use vegetables and omit the chicken.




INGREDIENTS
  1. 2 cups chicken stock
  2. 1 stick celery
  3. few baby spinach leaves
  4. 1/2 chicken breast,sliced,and handful frozen prawns
  5. 100gm fine rice noodles
METHOD
Cook the noodles according to the packet instructions and place in individual bowls,heat the chicken stock along with the celery and bowl for 5 minutes. discard celery and add in the chicken slices,simmer till done,remove and place on top of the noodles.now cook the prawns and then the spinach in the same way and when done pour the stock over the noodles.serve immediately sprinkled with some hot  fresh red chillies on top.

Backed Chicken WIth Rosemary

BAKED CHICKEN WITH ROSEMARY

A MICRO OVEN RECIPE.

This is a very simple roast chicken dish which is lifted to another level with an aromatic blend of rosemary and lemon.served with blanched,buttered vegetables  this makes a flavoursome and nutritious meal.

INGREDIENTS
  1. 4 full chicken legs with skin
  2. 2 tbsp olive oil
  3. 1/2 tbsp dried rosemary
  4. 1 tbsp grated lime rind (lime rind means IT's the zest of the lime, the outer green part of the peel --- don't use the white underneath, it's bitter.)
  5. lime wedges to garnish
      6. salt to taste 

METHOD

Preheat oven to 180 degree  celsius.

First sprinkle the salt over the chicken pieces and rub in well.

then brush olive oil over them and sprinkle with lime rind and rosemary.

place the chicken in a shallow ovenproof dish and bake for 35-40 minutes.

garnish with lime wedges and serve with buttered vegetables.
