Shahi Kofta


Ingredients :

  1. Potato – 250 gms
  2. Tomato – 250 gms
  3. Boiled peas – 1 cup
  4. Onion paste – 2 tsp
  5. Cooked rice – 1 ½ cup
  6. Grated coconut – 1 cup
  7. Curd – 1 cup
  8. Oil to deep fry
  9. Turmeric powder – 1 tsp
  10. Chili powder – 1 tsp
  11. Coriander powder – 1 tsp
  12. Butter – 2 tbsp
  13. Fresh cream – 2 tbsp
  14. Cashew nut – 12
  15. Almond – 7
  16. Raisins – 15
  17. Chopped Coriander leaves – 1 cup
  18. Ginger-chili paste – 2 tsp
  19. Paneer/cottage cheese – 150 gms
  20. Salt to taste
  21. Water – 1 cup

Method :
Grind the tomatoes and keep aside.Boil, peel and mash the potatoes.


 Add cooked rice, coriander leaves, ginger-chili paste, salt and grated coconut to the mashed potatoes. Knead and divide into 12 portions and make rounds.


 Chop the cashew nuts and almonds finely.Add raisins and chopped nuts to paneer/cottage cheese and make 10 rounds.Now press the potato rounds and stuff in the paneer rounds. Seal them properly and make rounds.Deep fry them in oil and keep aside.Heat butter in a pan. Sauté the onion paste till golden brown.


 Add the tomato puree, salt, turmeric powder, chili powder,coriander powder and sauté till the oil starts separating.Add 1 cup water and let it boil. Add the boiled peas and let the gravy boil for 5 minutes.
Add the beaten curd and put off the flame.Mix properly and add the koftas.


 Serve hot garnished with coriander leaves.
